Oven roasted chicken breast with cauliflower mash (serves 2)
Do you sometimes feel like mash but not quite like the heavy potato mash?
Try this recipe below for a delicious potato mash alternative if you feel more like having a lighter meal.

Ingredients:
1 cauliflower
ghee or butter, olive oil
salt, pepper, dried sage & rosemary
2 chicken breasts
1/2 lemon sliced
3 cloves garlic
Method:
Preheat the oven to 200’. Melt 1 tbsp. ghee or butter in an oven safe dish and place chicken breasts into the dish. Season with salt, pepper, sage and rosemary. Add sliced lemon and 3 cloves sliced garlic.
Place chicken in the oven,turn temperature down to 120’ and roast for ca. 45min.
Cooking the chicken on such a low temperature makes it super tender.
While the chicken is cooking prepare your cauliflower mash. First cut and wash florets then steam until softened. Let cool down a little and place cauliflower together with salt, pepper, garlic and about 3tbsp. olive oil in your food processor or mixer.
Blend until the cauliflower has turned into a mash like consistency.
Keep warm in a saucepan or serve immediately. Option: Add some ghee/ butter to enhance flavours.
Serve the chicken with cauliflower mash and some green leafy salad.
