Raw carrot & kale salad

Ingredients:

  • 6 stalks curly kale
  • 2 shredded carrots
  • 2 handful finely sliced red cabbage
  • small handful pepitas

Dressing:

  • 4 tbsp olive oil
  • 2-3 tbsp apple cider vinegar
  • juice of gulf ball size ginger
  • squeeze of lemon
  • 1/2 tbsp honey

> Place the shredded carrots and sliced cabbage into a salad bowel

> Pull the leaves of the kale stalks and chop up very finely (as small as possible)

> add the peppiest on top

> To make the dressing shred the ginger into a bowel (nice and fine). Take the pulp into your hands and squeeze out the juice. (Discard the remaining ginger pulp or use it for making stock or curry)

> Now add the olive oil, apple cider vinegar, lemon and honey and stir until well combined

> Pour over the salad and enjoy

Tip: This salad tastes great if you let it sit a little while in its dressing so the flavours can unfold and the kale will soften a bit

> Add your favourite protein
