Slow cooked lamb shanks with cauliflower mash
Ingredients: (serves 2)

1-2 lamb shanks (depending on size)

1 can diced tomatoes
-
1 large clove garlic (cut into thin pieces)

5 cardamon pods
-
5 cloves
-
1/2 tsp cinnamon
-
1/2 cup chicken or beef stock
-
salt, pepper
-
1 head of cauliflower, cut into chunks

2 tbsp coconut oil
-
1/4- 1/2 cup coconut milk
Method:

Place the lamb shanks in a slow cooker

Cover with diced tomatoes & stock

Season with salt, pepper and sprinkle with cinnamon

Add cardamon pods, cloves and garlic slices

Put the slow cooker on high (for 6 hours cooking time) or low (for 8h cooking time)

Once the lamb shanks are almost cooked prepare your cauliflower mash:

Steam or boil cauliflower until soften, drain of any excess water

Place cauliflower back in the pot and add all remaining ingredients: salt, pepper, coconut oil, coconut milk and mix with a hand mixer. Adjust consistency if desired

Serve hot with the slow cooked lamb shanks
