This is the most simple, delicious dish.
Perfect for when you don't have time to cook or as part of your meal prep for the week.
Ingredients:

1 Lebanese cucumber

2 spring onions (finely chopped)

70g cooked quinoa
-
1 bunch roughly chopped parsley (20g)

4 sprigs of mint, picked and chopped
-
1/2 tsp salt
-
2 tbsp olive oil
-
juice of 1/2 lemon (1-2 tbsp)
Method:

Mix everything together and eat immediately
