Green tabouleh

This is the most simple, delicious dish.

Perfect for when you don't have time to cook or as part of your meal prep for the week.


  • 1 Lebanese cucumber
  • 2 spring onions (finely chopped)
  • 70g cooked quinoa
  • 1 bunch roughly chopped parsley (20g)
  • 4 sprigs of mint, picked and chopped
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • juice of 1/2 lemon (1-2 tbsp)



  • Mix everything together and eat immediately
