Beetroot, avocado and chicken lime salad


  • 1 beetroot
  • Olive oil, coconut oil
  • 1 lime
  • 1 clove garlic, 1 chilli
  • 2 chicken breasts
  • Veggies: rocket, cherry tomatoes, cucumber, avocado
  • small handful crushed walnuts
  • Mustard, apple cider vinegar
  • Salt, pepper


Start with preparing a chicken marinade:

Freshly chopped chilli, shredded lime skin (1/4- 1/2 lime), lime juice, garlic, olive oil and a little salt & pepper.

Slice your chicken breast into pieces and place in your marinade. Turn on grill and place the chicken on a baking tray. Grill the chicken on both sides until golden brown.


Simply shred the beetroot and place in a large salad bowel


Place the following ingredients in a large salad bowel: Rocket, avocado, cherry tomatoes, cucumber, shredded beetroot.


For the dressing mix in a small bowl: 2tbsp. olive oil, mustard (1/4-1/2 tsp.), 1 clove garlic, lime, 1tbsp. apple cider vinegar

Top your salad with the chicken, crushed walnuts, pour the dressing over and enjoy!
