Simple Tuna & Rice Bowl

Simple tuna and rice bowel

Ingredients:

  • 1 serving of cooked basmati rice per person
  • chopped capsicum, cucumber, finely sliced red cabbage, 1/4 red onion
  • 1/2 cup green peas
  • 1/2 bunch fresh coriander
  • curly kale (for kale chips)
  • hummus
  • salt, pepper, lemon, apple cider vinegar
  • tinned tuna

Method:

Preheat the oven to 200’. Place some curly kale on a baking tray with a little salt and a drizzle of olive oil.

Chop up all your veggies and place in a bowel. Add the rice & tuna, stir well.

Add some salt and pepper, 1 tsp. olive oil & 1 tbsp. apple cider vinegar per person.

Squeeze some fresh lemon over it.

Place the tray with kale in the oven and bake for 5-10min. (Keep checking the kale so it doesn’t burn. You do want to leave it in the oven though until it is nice and crisp.)

Serve the dish in a bowel with a tablespoon of hummus on top and the kale chips on the side.
