Purple Quinoa Porridge

Are you tired of having the same breakfast every morning and in need of some variety

and change? Try this recipe below:

Ingredients (per 1 serve):
– 1 cup cooked quinoa
– 3/4 cup coconut milk, 1/2 cup water
– Spices: 2 cardamon pods, 4 cloves, 1 tsp cinnamon, 1/2 tsp vanilla and a pinch Himalayan salt
– 1/4 Banana, 1/2 cup blueberries
– Chia seeds, shredded coconut
– Walnuts or pistachios

Method:
√ Place cooked quinoa in a small pot, add coconut milk and water
√ Add all spices: cardamon pods, cloves, cinnamon and vanilla, salt
√ Thinly slice 1/4 banana and add to the porridge
√ Slowly bring the porridge to boil and simmer on very low temperature for 5-10min.
√ Crush the blueberries in the pot so the porridge turns purple
√ Keep stirring the porridge while it simmers
√ Take out cardamon, cloves                                                                    √ Serve with chia, shredded coconut and walnuts or pistachios and some more cinnamon. Optional: 1tsp honey
