Ingredients: (2 servings)

2 tbsp olive oil

1/2 orange thinly sliced

2 tomatoes thinly sliced or 1 tomato + 1/2 can diced tomatoes

2 cloves of garlic, peeled and thinly sliced

2 sprigs of fresh thyme

1/2 small red chilli, seeds removed and thinly sliced

3 cardamon pods, crushed to reveal black seeds
-
12-14 large prawns (about 200g once peeled)

freshly ground pepper

3-5 tbsp water
Method:

Heat oil in a pan to medium heat

Place the orange sliced into the pan and cook for 30 sec then turn them over

Add tomato, garlic, thyme, chilli and cardamon and cook on high heat until the tomato slices start to break down a little (3min.)

Place prawns into pan and season with salt and pepper
-
Add 3 tbsp of water and cook until the prawns have turned pink
-
Serve immediately with your favourite salad or favourite side
