Ingredients: (serves 2)

  • 1-2 lamb shanks (depending on size)
  • 1 can diced tomatoes
  • 1 large clove garlic (cut into thin pieces)
  • 5 cardamon pods
  • 5 cloves
  • 1/2 tsp cinnamon
  • 1/2 cup chicken or beef stock
  • salt, pepper
  • 1 head of cauliflower, cut into chunks
  • 2 tbsp coconut oil
  • 1/4- 1/2 cup coconut milk

 

Method:

  • Place the lamb shanks in a slow cooker
  • Cover with diced tomatoes & stock
  • Season with salt, pepper and sprinkle with cinnamon
  • Add cardamon pods, cloves and garlic slices
  • Put the slow cooker on high (for 6 hours cooking time) or low (for 8h cooking time)
  • Once the lamb shanks are almost cooked prepare your cauliflower mash:
  • Steam or boil cauliflower until soften, drain of any excess water
  • Place cauliflower back in the pot and add all remaining ingredients: salt, pepper, coconut oil, coconut milk and mix with a hand mixer. Adjust consistency if desired
  • Serve hot with the slow cooked lamb shanks
