Cumin chicken with slaw & guacamole

(serves 2)

Ingredients:

  • 300g diced chicken
  • 1 clove garlic, crushed
  • 1.5 tsp paprika
  • 2 tsp cumin seeds
  • salt, pepper to taste
  • 1/2 lemon
  • 1 large avocado
  • 1/5 red onion, chopped finely
  • olive oil, butter
  • 1 handful finely sliced red cabbage
  • 1/2 capsicum finely sliced
  • 1 small zucchini, grated or julienned
  • 1 carrot, grated

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp apple cider vinegar
  • 1tbsp tahini
  • juice of 1/4 lemon
  • little water

Step 1:

Place the chicken with garlic, cumin, paprika, salt and pepper in a bowel and mix well.

Drizzle a little bit of lemon juice over it.

Step 2:

Place all your veggies in a bowel, add the dressing and mix well.

Step 3:

Make the guacamole by squashing up the flesh of 1 large avocado. Add the red onion, salt and pepper to taste as well as juice of 1/4 lemon.

Stir until well combined.

Step 4:

Heat 1 tbsp of butter in a frying pan. Cook the chicken until cooked through and serve all elements on a plate.
